Hello and welcome

I have been following https://lowcarblove.com and trying some of her recipes and I must say the ones that I have tried I am loving them.  Last weekend I made the Keto Pizza Pockets and I will definitely be making them again. 

Keto Pizza Pocket (Calzone)

Dough

INGREDIENTS:

  • 1 ¼ cup mozzarella cheese 
  • ½ cup almond flour 
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Pinch red pepper flakes
  • ½ teaspoon italian seasoning
  • 1 teaspoon baking powder
  • ½ teaspoon xanthan gum 
  • 1 egg

Filling

INGREDIENTS:

  • pizza sauce: (store bought ½ cup) 
  • 1- can 6 oz tomato paste
  • 1- can 15 oz tomato sauce 
  • 1 tablespoon oregano 
  • 2.5 tablespoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon sweetener 
  • ½ cup ricotta
  • ½ cup pepperoni 
  • ½ cup shredded mozzarella
  • Brush too with melted butter 
  • ½ teaspoon minced garlic

DIRECTIONS:

  1. Preheat oven to 350
  2. Prepare a cookie sheet with parchment paper
  3. In a bowl melt the cheese. 
  4. Once melted add flour, baking powder, xanthan, and egg. 
  5. Knead until well combined 
  6. In a pot add sauce ingredients cook over medium heat until it boils and reduce hit and simmer for 5 to 10 minutes 
  7. Roll out add sauce and fillings 
  8. Seal and make slits on top 
  9. Brush too with melted butter and sprinkle garlic salt 
  10. Bake for 15 to 20 minutes or until done depending on filling
