Hello and welcome to Saturday, I hope you are enjoying your day. I usually do not cook through the week, I do a meal prep on the weekends where I prepare two to three meals, and when Monday comes all, I need to do is heat what I want to eat. With working now this is much easier for my household. Do you meal prep? Do you have any favorite meals that you prepare? I have started doing the Keto diet as my doctor wants me to limit some carbs. I found this great book and I am enjoying it and learning more about the Keto diet. I have not tried a lot of the recipes yet, but I plan on doing some this weekend.
Weekend Cooking was started at Beth Fish Reads back in October 2009. For more than 10 years like-minded bloggers shared their posts each week. I began contributing in May 2010.

I am not much of a breakfast person, but I found that I like a smoothies for breakfast. I have included on of the smoothie recipe that is my go to for breakfast
“Avocado and Blueberry Smoothie

How about a smoothie to start your day? Taste the delight of goodness and healthy nutrients with this avocado and blueberry smoothie. It’s one way of proving that getting into a ketogenic diet can be fun, exciting, and inspiring with cool recipes on the list.
Ingredients:
3/4 cup frozen blueberries (I have used fresh blueberries)
1 medium avocados
1 1/2 cup coconut milk
1 tablespoon lemon juice
1/4 teaspoon Lakanto drops, vanilla
1/2 cup ice cubes”
“Optional add-ins
2 tablespoons almond butter
1 tablespoon cacao nibs (I used cacao poweder)
1/2 teaspoon cayenne powder
1/2 teaspoon spirulina
Instructions:
1. Add all ingredients to a blender and combine until smooth.
2. Divide into two glasses and serve immediately.
